2 Tbsp. one of the following seasonings:
Red Cloud Peak Seasoning
Cape Hatteras Smoked Seafood Seasoning
Black River Creole Seasoning
1/2 cup all-purpose flour
1/2 tsp. baking powder
3/4 cup water
1 large sweet onion
Vegetable oil for deep frying
salt to taste
Whisk together a choice of seasoning with flour and baking powder in a wide, shallow bowl. Wisk water and egg together until blended then stir into dry ingredients until combined. Slice onion into very thin rounds. Heat oil to about 350 degrees. Add a handful of onion slices at a time to batter, tossing to coat. Fry each batch until golden brown, about 1 to 2 min. Transfer fried onion rings to a paper towel-lined platter and sprinkle with salt to taste while still hot. Continue with remaining onions. Serve warm or at room temperature.
