Alternative Uses for Pumpkin

Of course, pumpkin is great in many recipes (and who doesn’t love a good pumpkin pie), but you may be surprised at some of the things you can make out of pumpkin! Check out this list from inhabitat.com

Pumpkin Butter

This fabulous spread is from Oh She Glows: a website dedicated to incredible vegan recipes and healthy eating tips. You can use this butter on pancakes or toast, add it to muffins or baked energy bars, swirl it into your cereal, or just curl up with a jar of it and a spoon; it’s that good.

Spicy Roasted Pumpkin Wedges

I’ve made this recipe with slices of Kabocha squash as well, and it’s an absolutely fabulous vegan dish. Try it paired with a simple salad of quinoa or wild rice with toasted nuts, dry cranberries, and fresh herbs.

Ravioli Stuffed with Pumpkin

If you’ve never tried pumpkin or squash ravioli, you’ve missed out on something spectacular. There’s something truly gorgeous about the unique flavor of pumpkin when paired with goat cheese (or a vegan cashew equivalent). With regard to the dough, the easiest way to go about making these is to buy fresh pasta sheets from the grocery store and cut those into even shapes, or even just use wonton wrappers. If you happen to have the time and inclination to make your own dough, then go for it!Gluten-free fresh pasta can also work well, but remember that for either GF or regular dough, you’ll either need a pasta machine to roll it out evenly, or a fair bit of patience with a rolling pin.

Oatmeal with Pumpkin and Walnuts

Or pecans. Or any other nut/seed you like. This can be made a variety of different ways, from steel-cut oats in a slow cooker overnight, to just giving instant oatmeal an additional tweak. Basically, you just cook your favorite oats as per the directions on the package, and once they’re cooked, stir in a couple of tablespoons of pumpkin puree, and 1/4 teaspoon of pumpkin pie spice per bowl. Add brown sugar, maple syrup, or agave nectar to taste, and top with your favorite nuts/seeds. A bit of cream or plain yogurt can be lovely in this as well, and if you’d like something reallydecadent, crumble some spelt ginger cookies on top as well. Ultimately, it’s just a super-simple breakfast that tastes like absolute heaven.

Pumpkin and Cauliflower Wrap

This fabulous wrap adapted from the Two Spoons website is a delicious, simple meal that’s perfect for lunch, or a quick dinner. The recipe below serves 2 people.

Curried Pumpkin Soup

Simple, elegant, and amazingly comforting on a chilly autumn evening, this soup’s bright orange color and warming spices are utterly smile-inducing.

No, that isn’t a typo: I’ve loved the word “pamcakes” in lieu of the true name ever since I first read Hellboy, and since pumpkin is used as a flavoring and wet ingredient here… well, it just made sense to name them as such.
