The Factory Solves Your Lunch Time Woes With Food Truck Mondays

Your Monday lunch options just got better as The Factory in Franklin has begun hosting food truck Monday in the front parking lot next to MAFIAoZIA’s.

Each Monday, there will be three food trucks on site to provide lunch from 11 am – 1pm until the end of summer.

Two food trucks slated to take part each week are Chapman’s II   and Thunderbird Wings with a third truck changing each week.

Franklin resident and former banker, Scot Keliher became the owner of Chapman’s II in 2014.  He actually owns one of the original historic food trolleys that was mule driven back in the day. When deciding what to order at Chapman’s II, here’s an insider tip- try the flank steak. And if you don’t believe us, the reviews on the Chapman’s II Facebook page say it all- “The steak is heaven,” writes Maria Corder.

Joining Chapman’s II will be Franklin resident Trace Scarborough, owner of Thunderbird Wings. That name may sound familiar to you. Scarborough is responsible for roasting the butternut squash and sweet potatoes from Delvin Farms that is used in “Meil de Diamant” (or Honey Diamond), the special ale created by Mantra Artisan Ales for this year’s Brewfest.

As the name implies, Thunderbird Wings is all about the wings. What started out as a tailgating hobby for Scarborough has now turned into a full-fledged business. His speciality is chicken wings and thighs. One Facebook reviewer, who referred to himself as a chicken wing junkie wrote, “I consider myself a certified Chicken Wing ‘Junkie’, and have eaten wings all over this country Having said that, I must declare that Thunderbird has THE BEST Wings that I have ever had! Impeccably balanced rub and heat with the perfect amount of Pecan Wood smoke creates a Chicken Wing like no other! These Wings fall right off the bone and melt in your mouth!”
