noble-springs-dairy-ownersNoble Springs Dairy is a Grade A Goat Dairy and Artisanal Goat Cheese making operation  nestled in the rolling hills, just 6 miles from downtown Franklin, TN. Dustin & Justyne Noble, the owners of Noble Springs Dairy, have worked hard to restore the farm that has supported family farming since the seventeenth century and enjoy sharing their passion for agriculture. We asked Dustin a few questions about his farm.

How did you get into the dairy farming business?
When my brother and I were infants, we were allergic to cow’s milk. My parents got some goats to provide our family with goat’s milk which is an alternative for people who can’t digest cow’s milk.  By 10-years-old I had gotten into raising and showing registered dairy goats all over the country.  I met my wife Justyne showing goats. She grew up in a rural town in Kansas and raised dairy goats as her 4-H project. I am also licensed to judge dairy goat shows by the American Dairy Goat Association and travel all over the country judging goat shows.

How many goats do you currently have?
We have around 150 goats.  That number fluctuates depending on how many goats have been born in a given day. Some days we have as many as 15 baby goats born on our farm.

What’s a typical day like for you?
We start milking at 5:30 am and milk again at 5:30 pm. We milk twice a day every day. Between milking we make cheese, go to farmers markets, make deliveries to stores and restaurants, and do routine farm maintenance.

For those unfamiliar with goat’s milk and/or goat’s cheese, what’s the biggest difference between goat dairy products and cow dairy products?
Goat milk tends to be more easily digestible than cow’s milk due to the make up of the fat and protein molecules in the milk. Goat cheese or Chèvre is comparable to cream cheese in it’s characteristics but it is much lower in fat, cholesterol, and calories.

What products do you sell and where can people find your products?
We sell various types of cheeses, milk and drinkable yogurt. They are available at many stores and farmers markets in Tennessee. There is a more detailed list on our website.
