Southern Jerky Co. Opening Soon

For the last year and a half or so, Jennifer Bisceglia has been going from festival to festival around Nashville taking with her an idea that started in her home- glorious, glorious beef jerky.

The Southern Jerky Co., which started with an idea and was first field tested by her, her husband, neighbors and her sons’ sports teams, has grown into a start-up.

On April 1st, at 91 Seaboard Lane in Cool Springs, the doors will officially open to the Southern Jerky Co. It is across from Costco in the Moore’s Crossing Shopping Center.

Jennifer Bisceglia and Dean Shahan liked to create different flavors in the kitchen and give them out to friends and family. Dean would try out his recipes on golfers at the golf course and Jennifer would tempt parents at her children’s baseball games. After months of different combinations and overwhelmingly positive feedback, Jennifer and Dean decided to combine forces and create Southern Jerky Co.

Bisceglia, who has three sons from kindergarten to seventh grade, decided to get back in the workforce in a big way. Almost two years ago her friend brought over a meat dryer he got online to make home-made beef jerky. They tried it and she decided she could do better than the flavorings and spices that come standard online.

And after a little trial and error, three of the seven flavors that will be on offer April 1 were born.

From there she began going to festivals around the area- and still does. Southern Jerky Co. will be at the Franklin Hot Air Balloon Festival on May 14.

Now Featuring 7 Flavors:

Original, which is “your traditional teryaki flavor.”

Spicy Beef– “very good, not too hot, has some good horseradish and Tobasco. flavor. The heat is on the end.”

Spicy Chicken– same spices as Spicy Beef.

Honey Pepper (beef)- One of the original three.”More sweet,with honey coming through coarse ground black pepper.”

Yazoo Jalapeno (beef)- Partnered with Yazoo to create a jalapeno marinade with their Pale Ale.

Nashville Hot Chicken– “At festivals we had people who wanted something hotter than our spicy. I call this ‘blow your face off hot.’ Very, very, very spicy.

Nashville Hot Beef– same as hot chicken, just beef.

Soon, an eighth flavor will be unveiled: Jalapeno Peach Pork. Mmm.

Besides jerky, the store will sell the Might Good Bar, which is a granola bar Bisceglia created with honeyed beef jerky and almonds.

“It is very filling and packed with protein.” Also we do Jerky Bits as a healthier alternative to bacon bits.

Southern Jerky Co. will also support other local businesses by selling their items in the store.

Such as:

Southern City Flavors, whose products include everything from garlic-stuffed olives to Apple Moonshine grilling sauce. Moosehead Kettle Corn will also be sold there along with Neighbor’s Honey, a locally-sourced honey, whose products include creamed honey which is a spread.

The grand opening is 11 a.m. on April 1. Store hours will be: Mon. – Thurs. from 10 a.m. to 8 p.m.; Fri. and Sat. 10 a.m. to 9 p.m. Closed Sunday.
