Red Velvet Cheesecake Bites

We could watch these recipe videos all day. But we especially liked this one from Delish for red velvet cheesecake bites. Simple yet they make a great presentation for your next party, especially a holiday party!

Ingredients:
16 oz. cream cheese, softened
2 tbsp. sugar
1 c. heavy cream
1/4 tsp. vanilla
3 c. red velvet cake crumbs (from 1 box mix red velvet cake)

Instructions:
Bake a red velvet sheet cake, crumble it up. Then create your cheesecake portion by mixing cream cheese with sugar, heavy cream, and vanilla. Freeze cream cheese mixture for about 2 hours, until firm. Using a small cookie scoop, scoop small balls of cream cheese mixture and use your hands to form the mixture into ball.Roll mixture in red velvet cake crumbs, then transfer to a parchment-lined baking sheet. Once all cheesecake bites are rolled, transfer to the refrigerator to chill and harden, at least 1 hour.
