Farm-fresh and locally raised are the themes of Homestead Manor’s fall menus that were released this week. Composed by new executive chef Chad Starling, the restaurant offers new options for dinner and weekend brunch that feature locally sourced proteins, wood-fired pizzas and produce from the property’s onsite farm and gardens.

Several local purveyors lend high-quality beef, sausage, pork and chicken to the dinner menu mains, where Bear Creek Farm short ribs with parsnip puree, smoked cherry tomato, horseradish and parsnip chips or a Creekstorm Farm filet with a Yukon gold potato puree, Homestead Manor vegetables and sauce bordelaise are savory, indulgent options. Those seeking lighter fare may opt for trout sourced from Bucksnort, Tenn.; wood-grilled Katharos Farm chicken; or sweet potato-ricotta gnocchi.

Pizzas topped with goat cheese from Noble Springs Dairy, truffle, grilled onions, Homestead Manor arugula, figs and white truffle oil; or Katharos Farm sausage, Bear Creek ground beef, pepperoni, red sauce and mozzarella serve as a shareable starter or an entree alternative, especially when paired with a fresh baby lettuce, baby beets or baby kale salad using ingredients from the Homestead Farm.

New fall appetizers include fried Gulf oysters with comeback sauce and Homestead Manor garden chow chow; Willow Farms deviled eggs with the restaurant’s signature bacon jam and pickled mustard seeds; seafood Gumbo or crispy Brussels sprouts with dates, pecans, caramelized onions, lemon zest, and sorghum.

Brunch-goers can enjoy several selections off the dinner menu, including pizzas, salads and a burger, in addition to weekend specialties like steak and eggs, smoked brisket hash, and a smoked salmon “everything” bagel with an avocado smear, chive boursin, pickled red onions, cherry tomato and baby kale, among other offerings.

Homestead Manor is open Tuesday through Thursday from 4 p.m. to 9 p.m.; on Friday from 4 p.m. to 9 p.m.; on Saturday from 10 a.m. from 10 p.m. and on Sunday from 10 a.m. to 9 p.m. Brunch is served from 10 a.m. to 3 p.m. on Saturday and Sunday.
