Cashew Chicken Stir Fry

Ingredients

4 oz. skinless, boneless chicken breast

4 oz. cashew halves

4 oz. fresh onions

4 oz. fresh red bell peppers, julienned

4 oz. fresh bok choy cabbage, julienned

4 cloves of garlic, chopped

1 tbsp. low-sodium soy sauce

1 tbsp. olive oil

4 oz. fresh sugar snap peas, julienned

1 tbsp. orange juice

2 tbsp. fresh cilantro, chopped

Kosher salt

Fresh ground black pepper

Directions

1. Cut the chicken into small strips

2. Heat the olive oil in a pan and add the chicken. Stir fry until nearly cooked

3. Add the onion, garlic, and cashews and allow to cook for a few minutes.

4. Add the peppers, sugar snap pears, and bok choy.

5. Mix together the soy cause and orange juice and add to the pan

6. Make sure the chicken is cooked until an internal temperature of 165°F has been reached.

7. Season with salt, pepper and cilantro. Serve hot over steamed brown rice.
