Management and Supervision Issues

Employee Hygiene Violations
Multiple serious handwashing and hygiene violations were observed:
- Inadequate handwashing: An employee handled dirty dishes then clean dishes without washing hands
- Cell phone contamination: An employee used a cell phone then handled food without washing hands
- Improper glove procedures: An employee rinsed knives with soap while wearing gloves, then changed gloves without washing hands first
All these violations were corrected on-site through additional training.
Food Storage and Dating Problems
Several critical food storage issues were identified:
- Undated food: Cooked chicken pieces in the reach-in cooler (RIC) and reach-in freezer (RIF) had no date marking, with chicken that was three days old
- Improper storage: Food was being stored in a sheet pan placed on top of a trash can
- Container reuse: Single-use food containers were being reused for food storage
Chemical Storage Hazards
Dangerous chemical storage violations included:
- Bug spray stored in the kitchen area
- Bug spray stored on the same shelf as food items
Both violations were immediately corrected by removing the chemicals from food areas.
Equipment and Sanitation Issues
The inspection found problems with dishwashing procedures, including employees rinsing knives in a single sink instead of using the dishwasher. This was corrected by having the PIC run all knives through the proper dishwashing process.
Cross-Contamination Risks
A personal drink in an open can was found stored on a shelf with food items, creating a potential contamination risk. This was immediately removed during the inspection.
Menu Compliance
The restaurant was cited for not properly identifying beef tartar on their menu, which is required for raw or undercooked animal products.
Temperature Controls
Despite the many violations, Mi Kitchen maintained proper food temperatures during the inspection:
- Cold holding items (calamari, raw steak, raw shrimp) were at safe temperatures (39-42°F)
- Hot holding items (beef and chicken) maintained proper temperatures (159-167°F)
- Cooking temperatures for fried sesame chicken reached 191°F
Inspection Outcome
The restaurant received 12 total violations with zero repeat violations, indicating these were new issues. The fact that many violations were corrected on-site (COS) suggests the establishment was responsive to inspector feedback, though the initial management oversight was concerning.
