True Food Kitchen has been under construction in Green Hills at 3996 Hillsboro Pike. We stopped by for a first look inside and sampled some food as they prepare to open their doors to the public on September 26. The restaurant made news when former Nashvillian Oprah Winfrey announced an investment in the health-driven restaurant chain back in July.

Hours of operation for the Nashville location posted on the website indicate it will be open Monday – Friday, 11 a – 10 p; Saturday 10 a – 10 p and Sunday 10 a – 9 p, with brunch on Saturday and Sunday from 10 a – 4 p.

The fall menu consists of starters like charred cauliflower, chilled shrimp lettuce cups, and edamame dumplings just to name a few. A featured pizza was butternut squash top with caramelized onions, roasted garlic, organic kale, vegan almond ricotta, dried cranberry and sage. We highly recommend the fish tacos finished with tomatillo-avocado salsa, pickled jicama, dried sweet corn, coconut lime yogurt, and anasazi bean. You will also find a selection of handcrafted cocktails utilizing organic tequila and vodka. The menu also has a selection of wines and beer.

True Food Kitchen was founded in 2018 by Dr. Andrew Weil. The concept was to design a menu around Weil’s anti-inflammatory food pyramid. The dishes are influenced by Mediterranean, Asian and Californian cuisines and include items like soups, salads, pasta, noodle dishes, burgers and even cocktails.
