5. Trefoil Key Lime Pie, using the Trefoil

Puckett’s Boat House is known for their grill and oyster bar menu that offers by-the-shore dishes reminiscent of the Gulf coast and the Big Easy, plus Southern staples that draw from Mississippi Delta and Memphis roots.

For the Crust
1/3 lb melted butter
1 cup Trefoil cookies ground
1 cup Trefoil cookies crushed
1/3 cups pecans
1/3 cup sliced almonds
For the Filling
2 14 oz cans of sweetened condensed milk
1 cup egg yolks
3/4 cup real key lime juice
Preheat oven to 350 degrees. Roast nuts for 5 minutes until slightly brown. Mix all crust ingredients together and press to form in a 9-inch pie dish. Mix all filling ingredients together until well-incorporated. Bake crust for 5-7 minutes. Remove and cool. Fill crust with filling mixture and bake for 13-15 minutes. Remove from oven and allow to cool completely. For best results let set for 4-6 hours.
