Cali Burrito Brings So-Cal Flavor to Spring Hill

Cali Burrito Mexican Grill opened a little less than two weeks ago in Spring Hill, but its roots are in San Diego.

Adrian Ruiz, the owner and operator, and his partner and father Luis had been looking for a good spot to serve their family-recipe dishes in Spring Hill for a while. They saw an opportunity at 4935 Main Street and took it.

The family, who runs the many Oscar’s Taco Shops in the area, has already had great success. Originally, Luis and his brothers started Oscar’s Taco Shop in San Diego, before relocating to Phoenix and then finally to Tennessee almost 10 years ago.

“We use a lot of recipes passed down through our family,” Luis said. “The area seemed like a great place to introduce our food. So we opened up, and have been having amazing success and response in the years since.”

The same recipes are now being used for Cali Burrito. The name may be different, but that is because Adrian is expanding some things on the menu and trying to create his own brand.

New to Oscar’s regulars will be several specialty burritos, called the Cali, the Grande and the Ground, as well as a shrimp-and-white-sauce quesadilla.

Ruiz said they plan to cover and update the existing patio to make it more sheltered, to enable customers to eat outside for longer periods of the year. The decor will also change from Taco Express’ style.

“We will be redoing it in the ‘Cali’ style,” Ruiz said.

They also have their beer permit and a liquor license and consequent margarita machine are next on the list.

Ruiz said, if possible, he would like to have one in by late spring.
