Delta BoundIn 2012, Stacey and Jessica started Delta Bound in a food truck. Their catfish tacos have been featured on The Cooking Channel and have won numerous awards. In 2015, the Mobley’s opened up a restaurant in Spring Hill. The Spring Hill Commons seems perfect for a little ‘joint’ where Delta Bound can grow into a local favorite.

When and where did you get your love for cooking?
From home. I grew up on a farm, where there was a huge emphasis on growing, preparing and eating good food. All the women and most of the men in my family could cook, each with their own specialty. I began cooking at home as early as I can remember. I began my professional food career as a baker & cake designer about 15 years ago, and I still have a passion for pastry. Stacey brings his love of smoked meats and heartier food to our business.

Tell me about Delta Bound?
Delta Bound began as a food truck (trailer) in 2012, when we wanted to take a step toward owning our own food business. A restaurant was always in our plans, but the food truck allowed us to start up quickly, with less capital. Having a mobile food business seemed like an adventure we wanted to try – a different location/ menu/ clientele every day. Early this year, we learned of a small space that would suit our needs perfectly for opening our first storefront.Delta Bound

With Delta Bound, we wanted to bring OUR style of home cooking to middle TN – flavors of the deep south, including smoked meats, Cajun/Creole & soul food. Some dishes are very traditional, while others take a modern spin on old classics. With street food, folks are usually expecting something surprising, so that’s where we learned to take a familiar dish & turn it on it’s ear. The Delta Fried Catfish Taco is the perfect example of this – it tastes like the south, but it’s served in a taco.

What do you find most challenging about running your own business?

Right now, we are challenged with having enough time. Having regular operating hours, plus allowing enough time for the baking & food preparation that happens during down time, plus cleaning & maintenance stretches us pretty thin. Making this type of menu, fresh, from scratch isn’t easy, but we want to be serving food that we’re proud of. The compliments and support we receive reaffirms that our food is resonating with people.

We are small company employing family & friends to help us out but at the end of the day, we want to be there in person for our customers.

What are your future plans for Delta Bound?
We would love the opportunity to expand into a larger space once we’ve gotten established. Our current location is wonderful in so many ways, and we may opt for a second location instead of a move. The larger vision would include a juke joint vibe with music and a larger menu.

Favorite weekend activities when you’re not working?
We love spending time with our dogs, Dixie & Dewey, lazing around the house or playing at the park. Movie dates are also a favorite. After a meal at a favorite restaurant or a newly discovered one, we head to the theater to sit in the dark and disconnect from the world for a couple of hours.
